  • Cover the saucepan again and boil the gravy over low heat for 5-10 minutes, or until the yogurt and slurry are cooked and no longer taste raw.

After that, combine the dry spices (coriander, cumin, and red chili) with 100 g of water. Continue to saute the onions and spices for around 15 minutes longer. Your onions should have become a reddish-brown color, and the herbs should have begun releasing their oils by now (it’s been 30 minutes since we started).
  • In the same pan, add the marinated mutton. The Mutton has been chilled for a long time. Raise the heat and thoroughly combine everything. On high heat, fry the Mutton for 15 minutes, often turning to ensure it does not cling to the pan. Add 150200 g yogurt to the pan and whisk it until it is lump-free. At this stage, add 8 g salt and 10 g sugar. Continue to cook while mixing everything. Reduce the heat to medium after the moisture (from the chilled Mutton and yogurt) has dried up.
  • Add as much water as you’d like for the gravy/curry if you’re pleased with the color. For added flavor, add approximately four split green chilies. Cook until the meat is tender, covered. With two fingers, you should be able to break it apart.
  • Remove from the heat and drizzle with a bit of ghee. Before serving, cover and set aside for about 2 minutes.

When long cooking is paired with the abundance of Indian spices used in this recipe, the outcome is nothing short of spectacular. While it is one of our favorite restaurant dishes, this simple recipe will allow you to prepare it at home without sacrificing the restaurant flavor.

So, to get started, just follow the simple step-by-step method below!

  • Marinade the beef in the marinade ingredients for at least 2 hours, preferably overnight. When marinating the meat, don’t forget to soak the nuts!
  • 2 tablespoons oil, heated in a frying pan. Fry until the mutton chunks are brown, then add the marinated meat. Remove the item and place it away. This stage only gives the meat a rich golden-brown color and seal in the marinade ingredients; the Mutton will not be fully cooked.
  • To make a smooth paste, combine onions and water in a blender and bring to a boil. Once the water has been strained from the onion, a smooth onion paste is ready. The masala will have a smooth, creamy texture after this stage.
  • Boil tomatoes for 5 minutes in hot water; the skin will easily flake off. To get a thin puree, mix the tomatoes. Remove from the equation.
  • To make a coarse paste, grind the nuts (almonds, cashews, and coconut). Use the least amount of water possible and set it aside. The masala will be more decadent with the addition of nuts.
  • Add a quarter cup of oil to a handi (clay pot) or regular saucepan, along with all the whole spices (bay leaves, cloves, black cumin, black cardamom, cinnamon). Add the onion pure after they’ve started to sizzle.
  • Allow the onions to cook until they are light brown. This is a crucial phase that will take 810 minutes.
  • Stir the ginger-garlic paste and finely diced chile and cook for about half a minute, or until the grunginess of the ginger-garlic is gone.
  • Toss in the fried pork from earlier. Combine the meat with the onion masala and cook for one minute.
  • Salt, red chili powder, turmeric, roasted cumin, and coriander powder are all good additions. The raw tastes of the spices will be diminished if you saute them well. Make sure the spices don’t burn. On medium heat, cook the masala. If necessary, add a splash of water.
